I am interested in installing a couple of manual level crossings and I see a number of them available from kit makers.

My question is how does one accommodate the third rail - by omitting the boards between the outer rails or something else?

BOb Have a look here. this may give you some inspiration.
Also Marklin have an Automatic Level crossing that works well.

I only know the kits from Faller. Look in the catalogue from Faller if the level crossing is suitable for M/C-tracks. If so, the level crossing is suitable for Märklin rails (thus also for the third current rail). The level crossings for R1 curves are not suitable for long wagons, they will hit the fences on the level crossing. The kits are pleasant to build up, and suit very well.
