My question is: the old German passenger coaches had 3 axles, one at each end and one in the center; how did the center wheel set operate on curves? My guess is the center wheel set would slide crosswise to follow the curve. Am I correct?

It depends on which three-axle coaches you are referring to. The "Umbauwagen" (conversion coaches) did do exactly that for the centre axle:

I have the rebuild shorter coaches (donnerbuchsen) and the center axles do slide.

Are you sure? Donnerbüchsen only have two axles.

Yes, they are factory led equipped from the economic miracle era of the 1950s, rebuilt from thunderbox cars. Same length. The center axle was added to handle the extra payload and passengers.Two per set, coupled together. Either center double port entrance or single port entrance at each end.

Aahh, yes I get you now, you mean the coversion coaches, as well. Yes, these have three axles.
