I will be in Paris a few days next month, and would like to get some shopping in for Z Gauge for Marklin, etc. Any recommendations?

Why with two days in Paris would you waste any of it shopping? So much more to do.

Good point, but my wife will be shopping in places I won't necessarily want to visit so why not slip away for a bit and shop in a train store :)

I was last in Paris in December of 2019, so this may be a bit out of date.

Au Pullman on Rue d’Amsterdam carries a lot of Marklin as well as other European brands. They are very good, and knowledgeable. If you buy non Marklin let them know it will be for a Marklin layout, and they will change the wheel sets and couplers.

On Rue de Douai, near Place de Clichy there were two used train stores, Trans Europ, 48 rue de Douai, and next door Decotrain 50 Rue de Douai. They had used Marklin of various vintages. I would not say Marklin is their main model.

Let them know you are buying for export. Take your passport as you may be able to claim the sales tax back. Taxes in France make Paris an expensive place to buy

I have no idea if things gave changes since COVID, so my information may be out of date.

I posted about Marklin in Paris some time ago, pre COVID. If you can find the old thread on this forum there may be other information.

It may be a little harder to find Z scale material in Paris. I don't know how much of a market there is for it there.
