What train width would you propose I should take in to account when calculating maximum station platform width, along straight tracks? Or, as an alternative, what should the minimum distance be, between the rail and the platform edge?

I don't want to go safe on the rolling stock I have now, getting surprised later... Also, I want to be able to run freight trains there, on rare occasions!

For HO straight track the edge of the platform must be at least 21mm from the center of the track

The max width of your platforms will thus be your track spacing less 42 mm

As the responses have indicated, it is in NEM 102/103.

Sommerfeldt make a useful gadget that can be used for checking/measuring this which you can run around your track:

Notwithstanding your question pertains to staight platforms, the gadget does become very useful when laying
track involving curved platforms and what upon them, such as :
