Hello
I am attempting to install Marklin 60512 software to a computer running XP which it says it is compatible with, but it came with a 25 pin dongel which the computer does not have (only USB ports etc.) Does anyone know a way around this?

The 25 ping dongle is most likely one of the old serial connectors. Modern computers don't have a serial port, and the ones that do will have a 9 pin D shaped connector.
So, you will most likely need a USB to serial converter (with software), plus a 9 pin to 25 pin converter plug.

Is it serial or parallel? Best to refer to the instructions of the software to make sure. I don not have this product so I an not sure which it is. If memory serves me right, the software is a customized Windigital version which is no longer produced. So this would mean to me that there is no possible updates to the software, could someone verify this.

unfortunately the 25 pins dongle is designed to be plugged in the old parallel connector for the printer (LPT1), so things are more complicate: I do not know if a software to convert from USB to Parallel port exists. If so it should be bundled with the USB to 25 pins converter plug.
You could try at RS Components site, but I suppose it will cost a lot of money.
I personally have an old computer with 2 serial ports and 1 parallel port and the software is working correctly (even if there are more professional and complete other softwares which are better).

There is a USB to Parallel external device, however there is no guarantee that it will work with the dongle as sometimes the USB ports will have a loss of communication or go into sleep mode. Windigipet mentions in thier documentation that a internal card should be used instead of a USB version for connecting external devices. If the computer has room for an additional card to be installed for the parallel port then this would be the better route to go and the price seems comparable to a USB version.
