Do they do anything else besides sending the individual or combined original and expanded MM digital format to the rails? Manual shows either switch #2 only on for both formats consecutively, or 1,3,4 only on for just expanded MM.

From memory, I think that is all. I think there were some function decoders from the days of MM1 that could have issues in the MM2 world. So Märklin gave users to have the option of either format, or both.

Thank's guy's! Im' still trying to change the address on a Piko basic digital Taurus from the 90's with a Uhlenbrock decoder without dip switches. I havn't been able to at least with both formats active.

It’s been a looong time since I tried anything with the older Uhlenbrock decoders. As far as I can recall, I found them a little challenging to successfully program.
I only have one loco left with that sort of decoder, running the original AC motor, and if I have any issues with it, I think I would be inclined to just upgrade the loco.
