I picked up an old 3031 class 81 steamer today, it does have the manual reversing lever that sticks up thru the one side tank, no telex couplers, and the couplers have the little side "ears" on each side. Not sure what other spotting features tell which version, years it was made.

Kolls will tell you all, however we need to clear up the item number you are looking for.

According to both Google and Kolls, 3081 is the V200 in the blue / beige colours.

3031 is the Class 81 steamer, and there are 4 versions of it. There is also the 3032 loco which didn't have telex and there were 5 versions of that loco.

So your loco is maybe a 3032.1?

Not sure your question got answered. Without TELEX, your BR81 would be a 3032. The only 3032 with manual lever was the first version (1959). That is indicated in the Koll's page above, as well as on the Lokmuseum-de website.
