What class is the last steam withdrawn from service in West and East Germany?

The last regular steam-operated train of Deutsche Bundesbahn was run by 043 903-4 on 26. October 1977

I don't know about the other 9, but there was a hard cut in 1977 with many operational steam locos in the West.
End for express steamers was in 1975 (for BR 012 it was 31. May 1975).

Regular steam service never stopped for Deutsche Reichsbahn in the GDR and AFAIK still continues in united Germany.

HSB still runs regular steam trains in Harz. And there is a regular steam line between Bad Doberan and Kühlungsborn near Rostock. There is also the Rasende Roland on the island Rügen. These are all narrow gauge, which all are classified as BR 99. I don't know if there are any regular steam services on standard gauge.
