Can anyone explain how this signal switching works and how it starts and stops the train?

Signal red => no power on track, train stops.
Signal green => power on track, train runs.

Switching tracks switch signals to red and green as needed.
Some universal switches are also added. If the fast train (BR 24) gets too close, the slow train is routed to the siding and the fast train passes by. All done with switching tracks and relays.

There is an old Marklin book on signaling that you should refer to. I don't know if there is a copy already uploaded to the site somewhere. I cannot get the search to work sensibly, so cannot check for it.

Some time ago, I tried my hand with this theme, see this topic for details. The trick is to "measure" the relative speeds of the trains with circuit tracks.

The author of the video you cited is a member of marlin-users.net community, and posted his video also in the earlier topic.
